Homemade Soup Day

National Homemade Soup Day is on the 4th of February. There is something very comforting about a nice mug or bowl of homemade soup on a wet February day.


Soup is:-

  • easy to make and a great dish to teach the young ones

  • cheap ingredients or a great way to use up vegetable in the fridge

  • a cheap and nutritious way of feeding the family inbetween their online classes

  • not only great for lunch but good between meals if hunger pangs strike before dinner


This spinach soup is a vibrant green, really tasty and quick to make. In spring time you can swap the spinach for nettles for a fresh spring soup.



Ingredients:

  • 3 tbsps vegetable oil

  • 1 large onion

  • 3 cloves of garlic

  • 1 vegetable or chicken stock cube (to make 1 litre of stock)

  • 3 small potatoes - already peeled and boiled (can used left over potatoes or mash from previous meal)

  • 2 packets of spinach

  • Salt and pepper

  • 300ml of milk/cream or cream alternative.


Method:

  1. Heat the oil in a pan and add chopped onion. Allow to cook for 2 mins and add the garlic. Cool for another 2 mins.

  2. Add the stock and the spinach. Allow the spinach to cook for a couple of minutes until all wilted.

  3. Add the potatoes and seasoning and blitz

  4. Stir in milk/cream or cream alternative. Taste and if necessary add more seasoning.

  5. Bring back to temperature and serve
